Joys of Cooking

Tried some new things lately.
Sea Scallops. Yeah, they are so easy and I LOVE seafood...not sure why I haven't done this before now!!?



Below is one of "tried and true" favorites. Squash, zuccini, tomatoes (add whatever protein you have, in this case we did chicken) with white wine, Parmesan reduction. Of course garlic, salt and pepper added too.


Got a little gutsy and tried to make our FAVORITE dish from a local Cuban restaurant we love, Havana Rumba. Because the budget is tight, we don't always get to eat at such fun places. So I tried to bring the "fun" and great food to US!

Step One: Slow cooked the Beef Roast for 8 hrs. (on low) with Olive oil, salt/ pepper, garlic, lime juice and rainbow medley of peppers and onions.

***One thing I'd do differently here is cook the peppers separately and closer to serving time. Mainly because they cooked so down that they were virtually non existent in the dish. So either pan sear in olive oil, lime juice and spices....or add them half way through the cooking of the roast in the slow cooker.***


Step 2: Shredded the beef with a fork and pan seared with meat, peppers and onions in more olive oil and lime juice until ends were a bit crispy.

The KEY here is to use A LOT of OLIVE OIL if you want it to taste like Havana Rumba's. If you want a healthier version use less. Sorry I offer no measurement suggestions. I don't usually measure stuff when I cook. I add to taste.


Step 3: To finish , on the side I made some white rice and black beans (just like Havana Rumba).
The only thing missing is the Plantains. I looked at 2 different locations for them and had no luck. Must be out of season.

I give it a B score.
Flavor was good...but it wasn't Havana Rumba's Vaca Frita. Bryan LOVED it and said it tasted just like it. So there you go, I must be a harder critic.
Try it and let me know how yours goes.

"Say What!?"


I have so many "Say What!?" moments lately.
Its funny how their verbal development happens in spurts.

Lately, it seems that Mady is discovering adjectives/ adverbs.

Now, I am no English major.
So please don't judge whether I am describing what she is saying is actually an adjective or adverb. I think in some instances it may be both or one or the other. Hah!

Anyway.

She will say things like:
"Thats really, really fun." Emphasis on the word really.
"That is very, very tasty." Emphasis on tasty. 

I really, really like this very, very much!! Its just too darn cute...especially when she says it very serious with her glasses down on her nose and eyes peering at me over the top of them.

She is a character. Here are some of the new adjectives I've noticed her saying:  beautiful, incredible, awesome. When she uses them they are usually preceded with either "really, really" or "very, very".
Mady has also started to express her opinion more. Like I will ask her: "Would you like to have a grilled cheese for lunch?" and she says to me: "No, I not want that." Or, I will say to her its your nap time and she argues: "No Mommy, not yet. Pwayin' time now. For a few minutes." What!? Who do you think you are Little Missy? These moments have proven to be good opportunities to teach obedience and forbearance. For both her and I!!!

Bathroom Say What: 

As I was getting her out of the bath tonight she told me that her hands were "prickly under there." 
Which meant her hands that were under her towel where "wrinkly".

She loves to watch me put on my make up. She almost always has to hold one of my blush brushes and pretend to use it. I love this. I remember doing this with my grandmother, whom I adore.  The other day Bryan was home when Mady was with me in the bathroom and he asked her what Mommy was doing. 
I was expecting her to say: "Mommy puttin' on make-ups." ...because she does know that is what it is called. After all she pretends to participate and has done this for over a year now...but today she said: 
"Mommy's paintin'!"  Haha! Is she trying to tell me to lessen up on the eye shadow??? Haha. Maybe.

We were coloring the other day and she drew a horizontal line and she said: "Look Mom! It's a STRAIGHT 'S'!" Hilarious connection...and she is kind of correct on that.

Big Brother

Every January we plan a trip for my "Big" brother to come in town for a visit.
He lives in Maryland and we miss him very much.
Mady has really grown to love him. We talk on the phone to him just about every other day. He is very funny, loud, energetic and silly. All things that are great for entertaining a 2 year old. Mady adores him. However, he really adores her!!

So just to set up our trip....he flew in on January 17th. The day that the HUGE storm system came in.
He was in the AIR, while tornadoes were touching down here in Louisville. Mady and I were stuck in the basement; we couldn't even go pick him up because of the dangerous conditions. Even with the bad weather he managed to land {safely} and ON TIME! Go Southwest!

Little side note. My brother suffered a traumatic brain injury when he was 19 years old (he is 31 now) and has a very impaired short term memory. We get special passes to be able to walk him down to the gate when he takes off to make sure he gets on the correct flight. He manages just fine, but you can imagine how worried I was when I couldn't be there to pick him up on time!! Thank goodness this happened at our "little" Louisville airport and not Baltimore Washington International airport. He was actually waiting on the curb for me outside of baggage! He did great.


So after we found out that he survived an extremely bumpy flight, due to weather we decided to go celebrate and eat some Q'doba....our favorite.



Our spirits were high. We had full bellies and happy hearts when out of no where and on our way home a women SLAMMED into the back of our car as we were sitting in traffic. We were thankful none of us were injured, but of course we were all shaken up a bit. Insurance is covering all the damages and it definitely was not our fault, so we thank the Lord that we are all okay.


One thing that us "Centineo's" do well is EAT! We love to cook and congregate in a kitchen together.
Must be the Italian in us...but when Christopher comes to town I always make a TON of food! Chris is a great help in the kitchen. He is my sous chef and I like to order him around! Haha! Just kidding.
Although, I will say he is good at prep and cleaning, but his favorite is the eating part.



One day we made Potato Soup. Mainly because Mady had been playing pretend "cookin'" for weeks and I'd ask her what she was making and she'd say "Potato Soup". I have never fed her that, so I don't know where she got it, but it was hilarious...so I thought I should try to make it.

Turned out nicely.


We so enjoyed having Christopher around. We involved him in everything. He basically did life with us and we had an extra set of hands to help. He is a major help to me! The best part of having him around was our constant stream of laughter! I think we just "get" each others sense of humor. So we laughed most days with tears in our eyes!

Here he is with my friend Anna's little boy, Isaiah. He was such a precious baby. We all took turns holding him that night.

We so enjoyed his visit and cannot wait to spend more time with him on our next visit.

"Say What!?"

Mady is enamored with the story of Jonah.
It could be because we have a very good "boy friend" named Jonah, that we play with and see a lot.
Or it could be because we have a children's version of the Story of Jonah among her little "library".

Either way. She constantly talks about Jonah and the whale.

The other day I asked her what place did God tell Jonah to go to?
To which she should have said: Nineveh 
My child's answer: "Cinnamon " 

Not quite Love, but you get major points for making your mom and dad laugh until their were tears in our eyes!

The other day we were running to our car when it was raining and Mady proclaimed:
"Mom! Its drippin' every-where!? " 
Almost in a tone of disbelief. So precious.

This is a GROSS one. (You've been warned)
Mady and I recently came down with the Stomach bug.
I woke up Thursday morning with a bad stomach ache and actually got sick before Mady even woke up. I was nervous to expose her to my germs but had to be Mom until Daddy came home from work.

To my surprise, the Stomach bug also visited Mady. She apparently vomited on one of her blankets in the wee hours of the morning. She was calling for me over the monitor like normal and I went in and saw all her stuffed animals and other blankets on the floor (out of her crib) unscathed by the vomit.

She looked up at me and said: "Mommy, I sleepy so good!" 
To which I said: Good Honey. Getting closer now I could smell that she had gotten sick.
She immediately picks up her only remaining blanket and says: "Ewww yuck! Sicky all over it!!! " 

I love my little clean girl. What a dream. She had removed all other things as to not get "sicky" all over them. (Don't be fooled, they still got washed).

Poor Daddy didn't fair so well.  The surprise she left in her crib at nap wasn't as tidy.

The Happy Couple

Let me begin by saying....Mady has a slight crush.
His name is Jonah. He is her buddy...as you can see.....


"Watch out Jonah, she's coming in for the 'kill'!" 


I kind of have this leery feeling that I am going to be that Mom that gets the phone calls from the Mothers of little boys saying that my daughter won't leave their sons alone on the play ground! Oh, Lord! Help me now!

However, in this relationship....the feeling is quite mutual.
Mady and Jonah must know that their parents are best friends and really wouldn't mind an arranged amicable marriage :) . Just sayin'. 

I mean really. They do love each other. They play well together and their personalities balance one another perfectly.
Not to mention we'd have some cute, smart grandkids!!! Haha. A girl can dream, right?

Anyway. Here is their latest play date....
They were preparing for their future together. Doing normal "married things" like cooking, cleaning and hugging!

Jonah: Now Honey not too much spice...you know I have the ulcer! Mady: Yes, dear. I know.


Jonah: That is just delicious!!

Mady: Jonah! Can you take the trash out?

Mady: ...but before you do...tell me, does this apron make my hips look big?

Jonah: I'll be right there Mady, just finishing up the vacuuming and you look beautiful!

Awww! There, there. Just perfect!
See what I mean?! Match made in heaven!!!

Either way. Future Son-in-law or not, I love this kid. He is like a nephew to me because his Momma is like a sister. Love them dearly!

New Year: New Mercies

When I look back on 2011 and I get a little exhausted.
This year was definitely weighing on my heart.  I feel like my family had a good year.
Bryan saw major prayers answered and doors opened for him he didn't even really "knock" on, so to speak.
Mady grew and grew. Played and played. Had fun time after fun time. Really how awesome is a 1-2 year old's life? Pretty great.

There were major disappointment in 2011 and it started early.
In January we began the process to adopt from the Congo.  We were denied a home study based certain income requirements we could not meet. Door closed.

We miscarried 3 babies. More closed doors.

My body and my heart were exhausted.  Which is why i said: "sent through the ringer".

However, facing those things only proved to magnify God's mercy towards us. Even though I was dealing with some pretty awful circumstances God was dealing so sweetly with me. Using His word every day to minister to my heart anew. Old verses breathed new life into my heart. He upheld me. Truly. He was my rock. My refuge, my shelter. Meditating on His goodness, how he saved me, loved me. Thinking on an imperishably, magnificent eternity waiting for me with him made this tumultuous storm a smooth sail on a calm sea.  God has been so good to me that He has made suffering actually comforting.  Its hard to accurately put this into words. Words I have already blogged about countless times.

These wonderful truths do not hide the fact that this year was rough and I did spend a lot of time crying, begging, pleading with the Lord.

So you can see why I am ready to close the door on 2011. Ready to start fresh in 2012. New promises and new mercies. Not that His mercies weren't new in 2011. We know from scripture they are new every morning. (Lamentations 3:22-23) We don't need a new year to start anew! However, in my brain (the organized, nutty one) I wanted a literal new year. 

The New Year came and it wasn't without pain, to my surprise.

2012 started with me laid up and on my back because of a degenerative disc flare up in my L6. vertebrae.
I spent the first few days of 2012 feeling sorry for myself.  Wondering why my GREAT plans to start this year fresh didn't really pan out.

I even was pseudo asking God: "Hello, didn't you get the memo. No PAIN in 2012. When I said that I meant both emotional and physical." Did you hear me God?

I mean seriously.

But. I really did have this self righteous attitude.
Like for some reason because I had suffered so much in 2011 He would somehow SPARE me from more pain and suffering in 2012. Ridiculous!
'God don't work like that". I have since repented of such a prideful attitude.

I would be lying to you if I said I was ok with the thought of having another difficult season ahead of us. I do pray that the Lord would spare us from losing more babies. I pray that He would allow our plans to succeed. I think that is ok.

But the major thing I have to remember that even if there is more pain, God is still faithful. He is still holy. He is still good. I feel this has been my mantra lately, so I am sorry if I sound like a broken record, but its true. Even though I cannot see the end of my year and just the beginning, I know the Lord knows the year and its entirety. There is comfort in that.

So in praying for a good year....I remember His promise that even though it may not go as I planned (the beginning sure seems to have not followed my plan) it will go exactly as He has ordained. He has already made my "paths straight" because He is ever leading me to himself. I have an imperishable eternity promised to me because I am a daughter of the King. He saw fit to save me from an eternity spent, after this life in so much more pain than one could ever imagine. Making our worst day look like a walk in the park. He sent his Son to die for me. He readied Christ's atoning sacrafice for me. For all believers. That is incredible. Nothing I have done or will do will ever change this fact. My fate is sealed. For this I am thankful.

His mercies are new every day, every year and every moment.

Happy New Year.

Childs Play

I'd like you to meet Mady's friends.
We have the Little People, Siberian Tiger, Bengal Tiger, Snow Leopard, Baby Elephant and Pumba-the Wort hog.

Today they received an invitation from The Disney Princess to "dine" and "dance" at the Princess Castle.

There were also magical trolly rides and bus rides which transported each "friend" to and from school, church and the mall.



This friend was resting.
He had the job of giving "Horsey" rides to the Castle.


Then it was time for Mady to rest cool down and grab a drink.

Then someone was wondering what was so fun on the window sill.

The Princesses then thought it was a good idea to go up to the tower look-outs to see if Prince Daddy was on his way home from work to see his Princess.





And then the clock stuck 1pm and it was time for the Princess to get her beauty rest and have a Happy Nappy before the next days princess party.
